Toasted Coconut Granola

Granola is a staple in my house. I put it on pancakes, yogurt, waffles, rice cakes, etc. It is honestly so good and easy to make too! You can pack it with a ton of protein and healthy fats without all the added sugar that a lot of store-bought granolas contain. Plus it makes a great gift if you put it in a mason jar!

Toasted Coconut Granola

Total time:  30 min.


  • 2 cups almonds
  • 2 cups coconut flakes
  • 1 cup pumpkin seeds
  • 1/4 cup maple syrup
  • 2 tbsp coconut oil
  • 3 tsp cocoa powder
  • 1/2 tsp cinnamon
  • 1/2 tsp vanilla
  • 1/2 tsp sea salt
  • 1/4 cup chia seeds
  1. Line a baking sheet with parchment paper and preheat oven to 375 degrees
  2. Pour almonds into a food processor to chop into little pieces
  3. Mix almonds, coconut, and pumpkin seeds in a large bowl
  4. Over medium heat, melt coconut oil and maple syrup in a saucepan. Once melted, add cinnamon, vanilla, salt, and cocoa powder. Stir well
  5. Pour over the almond-seed mixture and toss well with hands
  6. Pour onto baking sheet and spread evenly. Sprinkle chia seeds over the top
  7. Bake for 12-14 minutes, tossing mixture halfway through. Make sure to watch it because the granola burns easily
