Mango-Kale Salad Wrap

Maybe I’ve been living under a rock my whole life, but I’ve just recently discovered that salad wraps are a thing. I was just wandering around the mall when I saw a cute little cafe called Freshii in the corner and decided to drop by. And my life changed. You’re telling me that I can have a salad but… Not a salad??! My mind was blown. I ordered the Metaboost wrap and it was so good that I went home and remade it! It tasted too good to be healthy. Without further rambling, this is how I remade the Freshii wrap:

1 whole wheat jumbo tortilla (bigger the better to fit more salad in)

1 cup kale cut into strips

1 cup spinach

2 tbsp goat cheese

1/4 cup mango, cut into cubes

1/4 cup shredded carrot

1 tbsp slivered almonds

2 tbsp cooked edamame

Drizzle of balsamic vinaigrette

Put all ingredients except the tortilla into a large bowl and toss as you would to a salad (because it is a salad). Microwave your tortilla for about 5 seconds to soften it and make it easier to wrap. Then, place some salad on middle to the tortilla. It should fill about a third of the tortilla area, remember to compress the salad so you can fit more in (you still might have some left over salad). Then, wrap the tortilla up like you would to a burrito and *boom* you’ve got yourself a delicious salad wrap!
